Agave, wood and citrus at first taste, then fresh long lasting baked agave with fresh fruit notes.
Unaged · open air, natural fermentation
Tequila Blanco · 100% agave · 40% ALC/VOL · 80 proof
The Blanco is bottled unaged, so no oak stands between the agave and the glass. It is where the estate’s own fields come through most plainly, and the one to start with if you want to know what Davo tastes like before the barrel.

Intense agave, followed by citrus, then fresh and lasting notes of citrus and peach, finishing with a sweet cooked agave mouth feel.
ColorVery clear, with silver shine.
AromaDominant note of freshly harvested agave, with sweet hints of vanilla and lemon, finishing with peach and red soil notes.
Every piña is cut from the estate’s own blue Weber agave at San José de Gracia, cooked in a high-pressure autoclave and milled. Fermentation then happens in stainless-steel tanks left open to the air of the orchards around them.
That open-air, natural fermentation runs on a proprietary in-house yeast culture created by the Dávalos brothers, master distillers — and it is where the Blanco’s intense agave and bright citrus are set. From there it runs through a stainless pot still and a second still fitted with a copper coil, and goes into the bottle.
From the field to the glass“Lord, I fall in love all over again after tasting Davo Blanco!”
Claudio Dávalos, master distiller
Room temperature, in a flute. The agave and the citrus sit right at the front of a Blanco, and a little warmth is what brings the peach behind them forward.
When you do want it in company, this is the one we keep coming back to.
