What Davo Is

Davo tequila was inspired by the desire to connect with those we love and honor those who have ascended.

Davo™ is created by Asuncion Spirits, LLC · Santa Barbara, California.

Davo is a small-batch, artisanal, premium sipping tequila. Born in Santa Barbara. Produced with love and care at Hacienda Capellanía, NOM 1545, in the Highlands of Jalisco. Davo is single-source, estate-grown agave, refined with a natural, open-air fermentation process, and master distilled by the Dávalos brothers. There are four flavor expressions, and our flagship product is the Almond Añejo.

Born in Santa Barbara.

Davo originated on the shores of Santa Barbara. It’s a town known for its laid back vibe, surf lifestyle and deep respect for Mexican culture. And a thirst for fine tequila! Asunción Spirits created Davo premium sipping tequila to promote slow, leisurely enjoyment of the delightful natural aromas and tasting notes captured in our handcrafted flavor expressions. It’s perfect for creating memories at celebrations with friends and family.

Raised at Hacienda Capellanía.

One estate. One source. The agave fields are surrounded by acres of fruit orchards on the estate. They are responsible for providing the “essence” — the unique wild yeast — vital for the open, natural fermentation process used to make Davo.

“Life is good. Remember that.”

Dave, “Davo”

Dave, known to family and friends as “Davo,” spent decades surfing, swimming, and celebrating life on the beaches of Santa Barbara. He was always the last to leave a party and the first to welcome everyone in. Today, Dave’s legacy lives on in every bottle of Davo tequila. Named in his honor and marked by the ascending dove, the brand celebrates a life defined by generosity, friendship, and resilience.

“Raise a glass to the people you love, to the memories you hold dear, and to the moments still waiting to be made.”

Laura Kronen · Founder, Asunción Spirits

After suffering a great loss, Laura had a longing in her heart to create. To give. To connect. To bring beauty into other people’s lives. That longing became Asuncion Spirits and Davo Tequila — born from memory, life, resilience, and hope.

One family, one estate.

Hacienda Capellanía is owned and run by the multigenerational Contreras family. There are three hundred acres of agave surrounded by citrus and other fruit groves. One family, one property, and one team means exceptional quality control. From the jimadores in the field, to the bottling line staff, these seasoned professionals are treated as family, with kindness and respect.

The orchards bear more than fruit.

Citrus, avocado, apple, peach and guava trees help create Davo’s signature flavor profiles. Wild yeast from the surrounding groves drives the open, natural fermentation process. It works in harmony with the Dávalos brothers’ proprietary culture of natural and wild endemic yeast.

Water from 180 meters.

A deep well, drilled to 590 feet when the facility was built in 2003, provides the pure, clean water added to the cooked agave for fermentation. The water quality is routinely monitored to ensure purity standards.

“Davo has Soul.”

The Davo Difference

Mixology

Davo is sipping tequila, and more.

Pour it neat, at room temperature, into a flute that asks you to slow down. Make a toast and begin your flavor journey. Sip slowly, allowing the notes and the finish to come through. That’s a great way to enjoy the Añejo with Natural Almond. When you want to mix things up, Davo also makes sensational cocktails. Here are three signature creations, crafted exclusively for Asuncion Spirits by master mixologists.
